Whole Green Lentils

One of the oldest cultivated crops in the world, Lentils are legumes with legacy. According to one ancient tale, an individual abandoned his birthright but for a mere bowl of lentils. Yep, they’re that good! Earthy, savory and satisfying, lentils are a plentiful protein source—in fact, a serving of lentils supplies more protein than an equivalent serving of beef. They are also a good source of fiber, calcium, phosphorus, and B vitamins. And, when dried, they cook rather quickly in relation to their other bean brethren—there is NO soaking required.

Trader Joe's Whole Green Lentils are distinguished by their greenish/brown color and robust, nutty flavor that carries seasoning quite comfortably. Plus, compared with other colors, green lentils hold their shape particularly well after cooking, making them a great addition to dishes that benefit from some texture: sides, salads, soups, vegetable curries, et al. And with a bit of spice, they even make a fine burrito filling or pita stuffing when mixed with other vegetables, too!
