They finish this melange with a creamy, herby cilantro sauce, and top each Pepper with a layer of melty Monterey jack cheese. The result is similar to an open-faced, unbattered version of a classic chile relleno, with a marvelous medley of flavors, textures, and aromatics in every bite.
