Russet Potatoes

Russets are among America’s favorite potatoes, likely because their starch content makes them so good for both baking and mashing. The Russets you’ll find at Trader Joe’s are definitely delicious, and they also happen to be loaded with potassium and fiber. They’re also practically a perfect size for baking (we recommend giving them a light coat of oil and salt before placing in the oven at 350°F for an hour), at about 4-5 inches and only about 100 calories each. Of course, you don’t have to stick with baking and mashing your Russet Potatoes. You can grate them and make quick hash browns, purée them to thicken soups or slice them, toss them in olive oil, and heat them in an air fryer to make healthy “fries.
