Off the coast of Argentina, Patagonian scallops (Zygochlamys patagonica) amass on the floor of the Atlantic Ocean, like little sunken treasures waiting to be discovered. Prized by chefs for their sweet flavor, tender texture, and bite-sized stature, these beloved bivalves are gathered by fishers using a conical net known as an “otter trawl,” which is designed to preserve the integrity of each pint-sized scallop while also reducing bycatch. That’s how our supplier brings in Trader Joe’s Patagonian Scallops, which we particularly prize for their versatility, ease of preparation, and, of course, remarkable value.
Owing to their smaller proportions, these frozen Scallops easily thaw inside the refrigerator or placed in a bag and submerged in cold water, after which they’re ready for all manner of recipes. We especially enjoy getting them super dry with a paper towel, then pan-searing them in a screaming-hot skillet with Ghee until they develop a beautiful, golden crust on both sides. They’re also great for plopping into seafood chowders, serving over pastas, or simply baking with butter, breadcrumbs, and Organic Sicilian Lemon Juice.
