What is A2? Glad you asked. Regular milk contains two variations of beta-casein protein: A1 and A2. Several years back, super-smart scientists in New Zealand discovered that some cows were producing milk with only A2 beta-casein. This “A2” milk didn’t have a different flavor. It didn’t even have a different nutrient profile. What it did have going for it, different than regular milk, was the prospect of being easier to digest for some people. These scientists realized that you could easily discover which cows were producing A2-only milk using a simple genetic test. The rest is history—including the advent of A2 Whole Milk in the dairy case at your neighborhood Trader Joe’s!
