Also known in some corners of the world as sweet anise, Fennel has an aromatic, distinctly licorice-like flavor that mellows into subtle sweetness when cooked. It has layers like an onion, a crisp texture that’s often compared to celery, and fine frilly leaves that resemble dill. So, what does one do with all of that? Oh, so many wondrous things. The citrusy-flavored leaves can be used to flavor dressing or marinades. Sliced thinly and paired with red onion, orange segments and avocado, Fennel makes a great salad. It is also delicious roasted at high temperatures, and its assertive flavors also fit well in rich soups and pastas. We are fond of cutting the bulb into whole leaves and topping them simply—shaved Parmesan and a drizzle of lemon juice and olive oil, with cracked black pepper, for fresh, flavorful appetizers.
