In order to understand what makes Trader Joe's Chocolate Croissants so special, it's important to examine the way that they're made. Our supplier, a highly regarded bakery in South San Francisco, makes the dough in a completely refrigerated environment, which helps prevent proofing before bake time. As part of the fermentation process, the dough is allowed to mature for 8 to 10 hours to develop full flavor. Then, each Croissant is hand rolled and layered using a traditional French laminating technique. Twenty-four thin layers of dough are layered with butter, and in the center of each pastry goes a special semi-sweet chocolate baton.
During baking, the butter melts, resulting in a flaky, buttery pastry-golden brown, crisp, and slightly bubbly on the outside with a soft, airy crumb (interior). Of course, the middle presents a melty bite of chocolate. Our Chocolate Croissants are fantastic right out of the package, or warmed up just a little. Enjoy with an espresso and a banana for breakfast. Or, warm one up in the afternoon for a sweet treat.
