Mention mole [MO-lay] and many people think of chocolate, and there are, in fact, sensational versions of mole that include chocolate. If you zoom out, however, you soon see the true ways of mole are manifold. After all, the very definition of this Aztec-derived word speaks to its myriad manifestations: sauce. Trader Joe’s Chicken Mole is not a chocolate-based version; it is rather sensational.
Inspired by recipes from Central Mexico, we simmer boneless, skinless Chicken leg meat in a Mole rojo (“red”). This tomato-based iteration is made with dried guajillo and pasilla peppers, which serve to darken the color of the sauce, while also adding some spicy heat. The flavor is further deepened with spices that include garlic, onion, coriander, and cinnamon.
After cooking, the tender pieces of Chicken in the rich Mole are flash frozen, so all you have to do when you get the 16-ounce package home is heat it (in the microwave or on the stovetop) and eat it! Tuck this Mole into some TJ’s Organic Yellow Corn Taco Shells, or wrap it in your favorite TJ’s Tortillas with some cheese and bake with our Enchilada Sauce.
