Also known as piri-piri or peri-peri (from “pilipili,” the Swahili word for “pepper,”) the African bird’s eye chile is a cultivar of the species Capsicum frutescens that’s primarily known within the culinary world for three things. First, it’s celebrated for its remarkable spice level (with a Scoville rating somewhere between 50,000 and 175,000, it’s just shy of habanero-level heat). Second, it’s adored for its naturally fruity, tangy flavor. And third, when pickled and mashed into a hot sauce, it’s famous for pairing almost unbelievably well with chicken.
