Assorted Mini Éclairs (LIMITED)

The French l’éclair means “flash” (as in lightning). It also carries the connotation of flamboyancy. Right in line with the original term, Trader Joe’s Assorted Mini Éclairs are definitely flamboyant (just look at those showy toppings!) and given their miniature size and delicious taste, they always disappear in a flash!

These Mini Éclairs are made for us in Belgium using traditional pâte à choux dough (literally: “cabbage paste,” named for its crinkly, baked texture that can resemble the exterior of a cabbage; we assure you, there is no cabbage in this recipe). The bakers form small, oblong pastries and fill them with smooth, velvety cream in six different flavors, including: Vanilla, Coffee, Raspberry, Dark Chocolate, Lemon, and Salted Caramel. And each Éclair is adorned with an icing that complements its interior flavor, plus a unique, textured topping. For example, the Mini Vanilla Éclair is adorned with a white chocolate topping and white & brown-colored, white chocolate dots. The Mini Raspberry Éclair has raspberry flavored icing with crumbles of freeze-dried red currant. The Mini Coffee Éclair is topped with mocha paste and a single, coffee-bean-shaped, mocha confection.

To enjoy, simply remove all packaging, place the Éclairs on a plate, and thaw in your refrigerator overnight (or at least six hours). By then, the cream will be creamy, the pastry will be tender, and these flashy little treats will be ready to share with holiday guests—or to enjoy by yourself, as your personal, Mini Éclair sampler!
